Ianto is immortal, but until he gets his memories triggered he doesn't know it. Once he finds out he's probably going to blow a gasket, but that's going to be a sequel. I'm sorry it's not making much sense at the moment - everything will probably fall into place once Ianto knows what's going on, but because it's all from his POV I can't really explain much.
